Ingredients

The cauliflower mash

  • 1 pound cauliflower
  • 4 ounces sour cream
  • 3 tablespoons butter
  • ΒΌ teaspoon garlic powder
  • salt to taste salt
  • pepper to taste pepper

The toppings

  • 1 cup grated cheddar cheese
  • 2 slices bacon, cooked and crumbled
  • 2 tablespoons chives, snipped

Instructions

  1. Cut the cauliflower into florets and place in a microwave-safe bowl with 2 tablespoons of water, covering it with cling film.
  2. Microwave for 5-8 minutes until tender, then drain excess water and let sit uncovered for a minute.
  3. Transfer the cauliflower to a food processor and blend until fluffy.
  4. Add butter, garlic powder, and sour cream to the processor and blend until it resembles mashed potatoes.
  5. Transfer the mixture to a bowl, mix in most of the chives and half of the cheddar cheese, and season with salt and pepper.
  6. Top with remaining cheese, chives, and bacon, then microwave or broil to melt the cheese.
