Loaded Cauliflower

The toppings

Instructions
- Cut the cauliflower into florets and place in a microwave-safe bowl with 2 tablespoons of water, covering it with cling film.
- Microwave for 5-8 minutes until tender, then drain excess water and let sit uncovered for a minute.
- Transfer the cauliflower to a food processor and blend until fluffy.
- Add butter, garlic powder, and sour cream to the processor and blend until it resembles mashed potatoes.
- Transfer the mixture to a bowl, mix in most of the chives and half of the cheddar cheese, and season with salt and pepper.
- Top with remaining cheese, chives, and bacon, then microwave or broil to melt the cheese.
