Loaded Mashed Cauliflower

Ingredients

The cauliflower

  • 2 medium heads cauliflower

The mix-ins

  • 8 pieces bacon, diced
  • 2 tbsp ghee (or coconut oil for dairy free)
  • 2 cups shredded cheese

The seasoning

  • 1 tbsp parsley
  • 1 tbsp chives
  • 1 tsp dill weed
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sea salt
  • 1 tsp ground pepper

Optional toppings

  • to taste chopped fresh chives
  • to taste additional shredded cheese

Instructions

  1. Cut the cauliflower into medium-sized florets and boil in water for 15 minutes until soft.
  2. While the cauliflower cooks, dice the bacon and cook it in a skillet until browned.
  3. Prepare the seasoning mix by combining all seasoning ingredients in a bowl.
  4. Once the cauliflower is cooked, drain it and return it to the pot.
  5. Mash the cauliflower with a potato masher while keeping the heat low.
  6. Add ghee, seasoning mix, bacon, and cheese to the mashed cauliflower and mix well.
  7. Serve topped with optional toppings as desired.
