Ingredients

The base

  • 2 cups raw pumpkin seeds
  • 1 cup flaked coconut (unsweetened)
  • ¼ teaspoon salt
  • 3 tablespoons honey or maple syrup
  • 1 tablespoon lime juice
  • 1 tablespoon coconut oil

Optional additions

  • to taste chia seeds
  • to taste spices (like cayenne, chile powder, turmeric)

Instructions

  1. Soak pumpkin seeds in water overnight or for 12 hours, then strain and pat them dry.
  2. Preheat the oven to 300°F.
  3. In a bowl, combine the pumpkin seeds, coconut flakes, and salt.
  4. In a saucepan, heat honey, lime juice, and coconut oil until warm, then pour over the mixture and mix gently.
  5. Spread the mixture on a parchment-lined sheet pan to about ½ inch thick and press down firmly.
  6. Bake in the oven for 30 minutes, checking halfway through.
  7. Turn off the oven and let the snacks cool completely for 3-4 hours until set and hardened.
  8. Break apart the snacks and store in an airtight container.
