Instructions
- Soak pumpkin seeds in water overnight or for 12 hours, then strain and pat them dry.
- Preheat the oven to 300°F.
- In a bowl, combine the pumpkin seeds, coconut flakes, and salt.
- In a saucepan, heat honey, lime juice, and coconut oil until warm, then pour over the mixture and mix gently.
- Spread the mixture on a parchment-lined sheet pan to about ½ inch thick and press down firmly.
- Bake in the oven for 30 minutes, checking halfway through.
- Turn off the oven and let the snacks cool completely for 3-4 hours until set and hardened.
- Break apart the snacks and store in an airtight container.
