Swiss Chard Salad Wraps with Apple Slaw

Ingredients

The wraps

  • 8-10 leaves Swiss chard

The slaw

  • 3 cups cabbage slaw mix
  • 1 large apple
  • 2 Tablespoons sunflower seeds
  • 2 stalks green onions
  • 2-3 Tablespoons parsley
  • 1 teaspoon lemon juice
  • ¼ cup crumbled Feta cheese
  • 1 cup cooked gluten free grain

The dressing

  • ½ cup plain Greek yogurt
  • 1 Tablespoon apple cider vinegar
  • 2 Tablespoons apple juice
  • 2 teaspoons dijon mustard
  • ¼ teaspoon onion powder
  • 1 Tablespoon honey or agave syrup
  • to taste sea salt and black pepper

Instructions

  1. Trim the stems from the Swiss chard and blanch the leaves in boiling water for 1 minute, then transfer to an ice bath.
  2. In a small bowl, whisk together the dressing ingredients and adjust thickness with apple juice if necessary.
  3. In a large bowl, combine the slaw ingredients and mix well with the dressing.
  4. Place ¼ to ⅓ cup of the slaw mix at the top edge of each chard leaf, fold sides inward, and roll tightly.
  5. Store wrapped chard in a sealed container in the fridge for up to 2 days.
