Ingredients

  • cups almond meal/flour
  • ¼ cup maple syrup
  • ¼ cup coconut oil
  • ¼ cup sunflower seeds, unsalted
  • ¼ cup mini chocolate chips
  • pinch kosher salt (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. Line a rimmed baking sheet with parchment paper or a silat mat.
  3. In a large bowl, combine the almond flour, maple syrup, coconut oil, sunflower seeds, chocolate chips, and salt (if using). Mix until a dough forms.
  4. Scoop a heaping tablespoon of dough, roll it into a ball, and flatten it into a cookie shape.
  5. Place the cookies on the baking sheet and repeat until all dough is used (12 cookies total).
  6. Bake for 15 minutes or until golden brown and cooked through.
  7. Cool and enjoy.
