Blender Apple Waffles

Ingredients

The batter

  • ¼ cup butter, melted
  • 1 ½ cups old fashioned oats
  • 1 ½ tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp fine sea salt
  • ¾ cup unsweetened applesauce
  • ½ cup milk of choice
  • 2 large eggs
  • 1 tsp vanilla extract

The apple

  • 1 medium apple, cored and chopped

Instructions

  1. Melt the butter and set aside.
  2. Blend oats, baking powder, cinnamon, salt, applesauce, milk, eggs, vanilla, and melted butter until smooth.
  3. Let the batter sit for at least 5 minutes to thicken while preheating the waffle maker.
  4. Spray the waffle iron with cooking spray and add ⅓ to ½ cup of batter.
  5. Cook for 5-6 minutes until golden brown, then transfer to a cooling rack.
  6. Serve with your favorite toppings.
