Ingredients

  • 1 cup unsweetened applesauce
  • 1 cup skim milk or milk of choice
  • 4 tablespoons unsalted butter, melted and cooled
  • 3 large eggs
  • 1 tablespoon pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 2 cups white whole wheat flour or whole wheat pastry flour
  • 2 teaspoons baking powder
  • teaspoons ground cinnamon
  • ½ teaspoon kosher salt

Instructions

  1. Preheat your waffle maker and optionally the oven to 200°F.
  2. In a blender, combine applesauce, milk, melted butter, eggs, maple syrup, and vanilla extract.
  3. Add flour, baking powder, cinnamon, and salt to the blender and blend until just combined.
  4. Cook the batter according to your waffle maker’s instructions.
  5. Keep waffles warm in the oven if making multiple batches, and enjoy with toppings.
