Ingredients

  • 4 cups unsalted roasted peanuts
  • 2 tbsp ghee
  • 1 tbsp peanut oil
  • 1 tsp Himalayan salt
  • 2 tbsp raw honey
  • 1 unit vanilla bean (seeds only, optional)

Instructions

  1. Re-roast the peanuts in a dry skillet over medium-low heat for about 5 minutes until golden and fragrant.
  2. Let the nuts cool for 5 to 10 minutes.
  3. Combine the peanuts, ghee, peanut oil (if using), vanilla seeds, and salt in a high-speed blender or food processor.
  4. Process on low speed for about 30 seconds, then increase the speed to 5-6 until creamy, about 30 seconds to a minute.
  5. Scrape the sides with a spatula and continue processing at full speed for 60 to 90 seconds until warm and smooth.
  6. Add melted honey and mix on high speed for about 15 seconds until incorporated.
  7. Transfer the peanut butter to an airtight jar and store in the pantry for several weeks.
  8. Let the peanut butter rest for 24 hours before using for best flavor.
