Homemade Creamy Peanut Butter

Instructions
- Re-roast the peanuts in a dry skillet over medium-low heat for about 5 minutes until golden and fragrant.
- Let the nuts cool for 5 to 10 minutes.
- Combine the peanuts, ghee, peanut oil (if using), vanilla seeds, and salt in a high-speed blender or food processor.
- Process on low speed for about 30 seconds, then increase the speed to 5-6 until creamy, about 30 seconds to a minute.
- Scrape the sides with a spatula and continue processing at full speed for 60 to 90 seconds until warm and smooth.
- Add melted honey and mix on high speed for about 15 seconds until incorporated.
- Transfer the peanut butter to an airtight jar and store in the pantry for several weeks.
- Let the peanut butter rest for 24 hours before using for best flavor.
