Instructions
- Melt butter in a large saucepan and cook mushrooms until they release their liquid.
- Add onions and garlic, cooking until onions soften.
- Stir in flour and cook for about a minute, then add chicken stock and simmer until thickened.
- Stir in milk and season with salt and pepper, simmering for another minute.
- Preheat oven to 375 degrees Fahrenheit.
- Brown ground beef with onions, garlic, and chili powder, draining excess fat.
- Combine ground beef mixture with mushroom sauce, tomatoes, corn, sour cream, and ¾ cup cheddar cheese.
- Transfer mixture to a baking dish, top with tater tots and remaining cheddar cheese.
- Bake uncovered for 40 to 50 minutes until bubbly and golden brown.
- Allow to cool for at least 10 minutes before garnishing with chives.
