Ingredients

Mushroom Sauce

  • 1 tablespoon butter
  • 8 ounces white button mushrooms, diced
  • ¾ cup chicken broth
  • ¼ teaspoon onion powder
  • teaspoon garlic powder
  • ½ cup milk
  • ¼ cup all-purpose flour
  • to taste salt and pepper

Casserole

  • 1 pound ground beef
  • ½ medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 15.5 ounce can diced tomatoes, drained
  • 1 cup frozen corn
  • ¼ cup sour cream
  • cups shredded cheddar cheese, divided
  • 16 ounces frozen tater tots
  • to taste minced fresh chives or sliced scallions, for garnish

Instructions

  1. Melt butter in a large saucepan and cook mushrooms until they release their liquid.
  2. Add onions and garlic, cooking until onions soften.
  3. Stir in flour and cook for about a minute, then add chicken stock and simmer until thickened.
  4. Stir in milk and season with salt and pepper, simmering for another minute.
  5. Preheat oven to 375 degrees Fahrenheit.
  6. Brown ground beef with onions, garlic, and chili powder, draining excess fat.
  7. Combine ground beef mixture with mushroom sauce, tomatoes, corn, sour cream, and ¾ cup cheddar cheese.
  8. Transfer mixture to a baking dish, top with tater tots and remaining cheddar cheese.
  9. Bake uncovered for 40 to 50 minutes until bubbly and golden brown.
  10. Allow to cool for at least 10 minutes before garnishing with chives.
