Holiday Grain-Free Sugar Cookies

Instructions
- 1. Cream together the butter, coconut oil, sugar, and Stevia until well combined.
- 2. Add the egg and vanilla, mixing until incorporated.
- 3. In a separate bowl, whisk together the almond flour, coconut flour, baking soda, and salt.
- 4. Gradually add the flour mixture to the creamed ingredients while mixing.
- 5. Form the dough into a ball, wrap it in plastic wrap, and chill in the fridge for at least one hour (overnight is best).
- 6. Preheat the oven to 350°F and line baking sheets with parchment paper.
- 7. Roll out the dough between two pieces of parchment paper to about ¼ inch thickness and cut into desired shapes.
- 8. Transfer the cookies to the baking sheets and bake for 10 to 13 minutes until slightly golden.
- 9. Allow cookies to cool completely on a wire rack before decorating.
