Valentine's Day Grain-Free Sugar Cookies

Ingredients

The cookies

  • 2 cups almond flour
  • ½ cup coconut flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup grass-fed butter, softened
  • ¼ cup coconut oil, melted and cooled
  • ¼ cup sugar
  • ¼ cup baking Stevia
  • 1 large egg
  • tsp vanilla extract

The chocolate glaze

  • ½ cup white chocolate chips
  • 1 Tbsp coconut oil
  • 2 drops pink food coloring
  • to taste none assortment of sprinkles

Instructions

  1. Whisk together almond flour, coconut flour, baking soda, and salt in a medium bowl.
  2. In a stand mixer, cream together butter, coconut oil, sugar, and Stevia, then add the egg and vanilla until combined.
  3. Slowly add the flour mixture to the creamed ingredients until fully combined.
  4. Form the dough into a ball, wrap in plastic wrap, and chill in the fridge for at least one hour, preferably overnight.
  5. Preheat the oven to 350°F and line baking sheets with parchment paper.
  6. Roll out the dough between parchment paper to about ¼ inch thick and cut into shapes.
  7. Transfer cookies to baking sheets and bake for 10 to 13 minutes until slightly golden.
  8. Allow cookies to cool completely on a wire rack before decorating.
  9. Melt chocolate and coconut oil in a microwave-safe bowl, then dip cookie tops and decorate with sprinkles.
