Instructions
- Whisk together almond flour, coconut flour, baking soda, and salt in a medium bowl.
- In a stand mixer, cream together butter, coconut oil, sugar, and Stevia, then add the egg and vanilla until combined.
- Slowly add the flour mixture to the creamed ingredients until fully combined.
- Form the dough into a ball, wrap in plastic wrap, and chill in the fridge for at least one hour, preferably overnight.
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- Roll out the dough between parchment paper to about ¼ inch thick and cut into shapes.
- Transfer cookies to baking sheets and bake for 10 to 13 minutes until slightly golden.
- Allow cookies to cool completely on a wire rack before decorating.
- Melt chocolate and coconut oil in a microwave-safe bowl, then dip cookie tops and decorate with sprinkles.
