Ingredients

The oats

  • 1 cup old fashioned oats
  • ¾ cup pumpkin puree
  • ¾ cup unsweetened vanilla almond milk
  • ½ cup plain Greek yogurt
  • 1 tbsp almond butter
  • 4 tsp honey or pure maple syrup
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • tsp fine sea salt

Optional toppings

  • to taste pecans
  • to taste whipped cream
  • to taste cinnamon

Instructions

  1. Combine all ingredients in a mixing bowl.
  2. Whisk until well combined and adjust sweetness if necessary.
  3. Divide the mixture into two jars or containers.
  4. Refrigerate for at least 4 hours or overnight.
  5. Top with optional toppings before serving.
