Ingredients

The oats

  • ½ cup rolled oats
  • ½ cup unsweetened almond milk
  • ¼ cup unsweetened plain Greek yogurt
  • ¼ cup pumpkin puree
  • 2 teaspoon chia seeds
  • 1 tablespoon maple syrup
  • ½ teaspoon pumpkin pie spice

Optional toppings

  • to taste chopped walnuts or pecans

Instructions

  1. Combine all of the ingredients in a mason jar or bowl, mixing until well incorporated.
  2. Cover and refrigerate for at least 3 hours or overnight until the oats are cold and creamy.
  3. Serve topped with a dollop of yogurt and chopped walnuts or pecans if desired.
