rosemary, minced (divided)
Instructions
- Preheat the oven to 350℉ (177℃).
- Season the pork with salt, pepper, Creole seasoning, garlic, Dijon mustard, and half of the thyme and rosemary.
- Prepare a baking pan by placing sliced onions and the remaining thyme and rosemary in it.
- Place the pork in a single layer in the pan and add more herbs if desired.
- Cover the pan with foil and bake for about 1 hour.
- After 1 hour, uncover and continue cooking for an additional 30 minutes to reduce liquid and brown the pork.
- Serve the ribs with mashed potatoes and pan drippings.
