Ingredients

The ribs

  • 3 pounds country-style ribs (bone-in)
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Creole seasoning

The marinade

  • 1 large onion, sliced
  • 2 teaspoons garlic, minced
  • 1 tablespoon Dijon mustard
  • 3 tablespoons thyme, minced (divided)
  • 2 tablespoons rosemary, minced (divided)

Instructions

  1. Preheat the oven to 350℉ (177℃).
  2. Season the pork with salt, pepper, Creole seasoning, garlic, Dijon mustard, and half of the thyme and rosemary.
  3. Prepare a baking pan by placing sliced onions and the remaining thyme and rosemary in it.
  4. Place the pork in a single layer in the pan and add more herbs if desired.
  5. Cover the pan with foil and bake for about 1 hour.
  6. After 1 hour, uncover and continue cooking for an additional 30 minutes to reduce liquid and brown the pork.
  7. Serve the ribs with mashed potatoes and pan drippings.
