Spicy Tuna Tartare

Instructions
- Preheat the oven to 350°F.
- Cut wonton wrappers in half diagonally to create triangles.
- Mix olive oil and lime juice, then brush the mixture onto the wonton triangles.
- Sprinkle the triangles with sea salt and sesame seeds, then bake for 10-12 minutes until golden brown.
- In a bowl, mix mayonnaise, sriracha, and lime juice for the sriracha sauce.
- In another bowl, combine cubed tuna, shallots, soy sauce, lime juice, sesame oil, sriracha, and ginger powder.
- Taste the tuna mixture and add salt if needed.
- Arrange the baked wonton chips on a plate, top with the tuna mixture, avocado, and drizzle with sriracha mayo.
- Finish with black sesame seeds, scallions, and jalapeños if desired.
