Roasted Garlic

extra virgin olive oil per head

extra virgin olive oil per cup of peeled cloves

fresh sprigs of rosemary or thyme (optional)
Instructions
- Preheat the oven to 400°F.
- For whole garlic heads, cut ½ inch off the tips to expose the cloves.
- Place the heads in a well-oiled skillet or baking dish.
- Drizzle with olive oil, sprinkle with salt and pepper, and add herbs if desired.
- Cover tightly with foil and roast for 35 minutes.
- Check for tenderness; if tender, uncover and roast for an additional 10-20 minutes until golden.
- For peeled garlic cloves, place 1 cup in a glass baking dish.
- Drizzle with 2-3 tablespoons of olive oil and cover with foil.
- Bake for 20-30 minutes until golden and caramelized.
