Roasted Garlic

Ingredients

Garlic

  • 6 heads fresh raw garlic
  • 1 cup peeled garlic cloves

Oil and Seasoning

  • 1 teaspoon extra virgin olive oil per head
  • 2-3 tablespoons extra virgin olive oil per cup of peeled cloves
  • to taste salt
  • to taste pepper
  • a few fresh sprigs of rosemary or thyme (optional)

Instructions

  1. Preheat the oven to 400°F.
  2. For whole garlic heads, cut ½ inch off the tips to expose the cloves.
  3. Place the heads in a well-oiled skillet or baking dish.
  4. Drizzle with olive oil, sprinkle with salt and pepper, and add herbs if desired.
  5. Cover tightly with foil and roast for 35 minutes.
  6. Check for tenderness; if tender, uncover and roast for an additional 10-20 minutes until golden.
  7. For peeled garlic cloves, place 1 cup in a glass baking dish.
  8. Drizzle with 2-3 tablespoons of olive oil and cover with foil.
  9. Bake for 20-30 minutes until golden and caramelized.
