Basil & Mint Vinaigrette

Ingredients

  • 3 ounces fresh Basil tops and leaves
  • 1 ounce fresh mint tops and leaves
  • ¼ cup white onion
  • 1 clove large garlic
  • 1 tablespoon low carb sugar (or Swerve, Lakanto)
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup red wine vinegar
  • ¼ cup lemon juice
  • ½ cup light olive oil or salad oil
  • ½ cup extra virgin olive oil

Instructions

  1. Combine all ingredients except the oils in a blender, packing the leaves down toward the blades.
  2. Blend the ingredients into a puree, stopping to stir as necessary.
  3. With the blender running on low, slowly add the oils until fully incorporated.
  4. Taste and adjust the seasoning to your preference.
  5. Pour the vinaigrette into a sealed container and refrigerate.
  6. Shake or stir before serving as it may separate in the fridge.
