Basil & Mint Vinaigrette

Ingredients

  • 3 ounces fresh Basil tops and leaves
  • 1 ounce fresh mint tops and leaves
  • ¼ cup white onion
  • 1 clove large garlic
  • 1 tablespoon low carb sugar (or Swerve, Lakanto)
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup red wine vinegar
  • ¼ cup lemon juice
  • ½ cup light olive oil or salad oil
  • ½ cup extra virgin olive oil

Instructions

  1. Combine all ingredients except the oils in a blender and pack the leaves down.
  2. Blend the ingredients into a puree, stirring as needed.
  3. With the blender running on low, slowly add the oils until fully incorporated.
  4. Taste and adjust seasoning as desired.
  5. Pour into a sealed container and refrigerate.
  6. Shake or stir before serving.
