Ingredients

The muffins

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup granulated sugar
  • 2 Tbsp granulated sugar
  • 5 Tbsp unsalted butter
  • 3 Tbsp vegetable oil
  • 2 large eggs
  • 1 ½ tsp vanilla extract
  • ½ tsp almond extract
  • 1 cup milk
  • 6 Tbsp rainbow jimmie sprinkles

The glaze

  • 1 ½ cups powdered sugar
  • 3 Tbsp evaporated milk or half and half
  • ¼ tsp vanilla extract
  • ¼ tsp almond extract

Instructions

  1. Preheat the oven to 400°F.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, blend the sugar, butter, and vegetable oil until creamy.
  4. Add the eggs one at a time, then mix in the vanilla and almond extracts.
  5. Gradually fold in the flour mixture and milk in batches, alternating between them.
  6. Gently fold in the rainbow sprinkles.
  7. Divide the batter among 12 muffin liners, filling each nearly full.
  8. Bake for 15-18 minutes until a toothpick comes out clean.
  9. Cool the muffins on a wire rack.
  10. For the glaze, whisk together the glaze ingredients until smooth.
  11. Dip the warm muffins in the glaze, then decorate with additional sprinkles.
