BLT with (or without) Crabmeat

Ingredients

  • 4 slices bacon
  • 4 whole whole-wheat buns (split and lightly toasted)
  • 1 ½ cups lump crab meat
  • 2 inch ripe tomatoes (cut into ¼ slices)
  • 1 head Bibb lettuce (or Boston)
  • ½ cup mayonnaise
  • 1 tablespoon tarragon (fresh, optional)

Instructions

  1. 1. Fry the bacon until crisp, about 5 to 10 minutes.
  2. 2. Drain the bacon on paper towels.
  3. 3. If using tarragon, finely chop it and mix it into the mayonnaise.
  4. 4. Spread the mayo mixture evenly on the toasted buns.
  5. 5. Top the buns with crabmeat, tomatoes, bacon, and lettuce.
  6. 6. Enjoy your sandwich!
