Ingredients

The batter

  • 1 cup unsweetened almond milk
  • 1 large egg
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 medium roasted beets
  • as desired nonstick cooking spray

Toppings

  • as desired maple syrup
  • as desired sliced strawberries
  • as desired whipped cream
  • as desired jam
  • as desired apple butter

Instructions

  1. Combine the almond milk, egg, melted coconut oil, maple syrup, flour, baking powder, and roasted beets in a blender or food processor and blend until smooth.
  2. Preheat the waffle maker according to the manufacturer's instructions.
  3. Spray the waffle iron with nonstick cooking spray.
  4. Pour about ¼ cup of batter onto the waffle maker and cook for 5-6 minutes until golden brown.
  5. Serve the waffles with your choice of toppings.
