Instructions
- Combine the almond milk, egg, melted coconut oil, maple syrup, flour, baking powder, and roasted beets in a blender or food processor and blend until smooth.
- Preheat the waffle maker according to the manufacturer's instructions.
- Spray the waffle iron with nonstick cooking spray.
- Pour about ¼ cup of batter onto the waffle maker and cook for 5-6 minutes until golden brown.
- Serve the waffles with your choice of toppings.
