Ingredients

The batter

  • 1 cup unsweetened almond milk
  • 1 large egg
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 cups baby spinach
  • as needed spray nonstick cooking spray

Toppings

  • as desired toppings (maple syrup, jam, apple butter, etc.)

Instructions

  1. Combine all ingredients in a blender or food processor and blend until smooth.
  2. Preheat the waffle maker and spray it with nonstick cooking spray.
  3. Pour about ¼ cup of batter into the waffle maker and cook for 5-6 minutes.
  4. Repeat until all batter is used.
  5. Serve with your choice of toppings.
