Turkey Sausage Breakfast Pockets

Ingredients

The filling

  • 8 ounces turkey sausage
  • 1 Tbsp unsalted butter
  • 1 Tbsp jalapeño, minced
  • 3 large eggs
  • a pinch salt
  • a pinch pepper
  • a pinch garlic powder

The dough

  • 1 tube crescent rolls

Instructions

  1. 1. Cook the turkey sausage in a sauté pan over medium heat until browned, then set aside.
  2. 2. In a bowl, whisk together the eggs.
  3. 3. Melt butter in the same pan, add jalapeño, and cook until translucent.
  4. 4. Add the eggs along with salt, pepper, and garlic powder, and scramble until halfway cooked.
  5. 5. Return the turkey sausage to the pan and finish scrambling the eggs.
  6. 6. Roll out the crescent rolls and divide them into individual pieces.
  7. 7. Spoon 1-2 tablespoons of the turkey and egg mixture onto the largest part of each crescent roll and top with mozzarella.
  8. 8. Pinch the sides to seal the filling and wrap the longer part of the crescent roll around the pocket.
  9. 9. Bake until golden brown.
