Turkey Sausage and Cheddar Omelet

Ingredients

The sausage

  • ½ lb 99% lean ground turkey breast
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • teaspoon ground sage
  • teaspoon ground thyme
  • teaspoon marjoram
  • teaspoon crushed red pepper flakes

The omelet

  • 4 large eggs
  • 4 large egg whites
  • 4 tablespoons water
  • 4 oz 50% reduced fat sharp cheddar cheese, shredded

Instructions

  1. Mix the ground turkey with salt, black pepper, sage, thyme, marjoram, and crushed red pepper until well combined.
  2. Cook the seasoned turkey in a medium nonstick skillet over medium heat until fully cooked and broken into small pieces, then set aside.
  3. In a separate bowl, whisk together eggs, egg whites, water, and a bit of salt and pepper.
  4. For each omelet, heat the skillet over medium-high heat, add the egg mixture, and stir gently to cook evenly.
  5. Once the edges are set, add an ounce of cheddar and a quarter of the cooked turkey down the center of the omelet.
  6. Fold one side of the omelet over the filling, then slide it onto a plate and fold the other side over.
  7. Repeat to make additional omelets or store leftover turkey sausage for future use.
