Ingredients

The cookie dough

  • 1 cup oat flour
  • 1 ½ cups regular oats
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup natural peanut butter
  • cup maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract

The chocolate coating

  • ½ cup 60% cacao chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Blend 1 cup of regular oats in a food processor until it turns into flour.
  3. In a large bowl, combine oat flour, 1 ½ cups of regular oats, cinnamon, baking powder, baking soda, and salt.
  4. In a medium bowl, mix peanut butter, maple syrup, egg, and vanilla extract until combined.
  5. Pour the wet ingredients into the dry ingredients and fold until combined.
  6. Scoop the dough onto a baking sheet lined with parchment paper and gently flatten the cookies.
  7. Bake for 10 minutes and then remove from the oven to cool on a rack.
  8. Melt chocolate chips in a microwave-safe bowl in 30-second increments, stirring until smooth.
  9. Dunk the bottom half of each cookie in the melted chocolate and place on a parchment-lined baking sheet to cool.
