Instructions
- Preheat the oven to 350°F.
- Blend 1 cup of regular oats in a food processor until it turns into flour.
- In a large bowl, combine oat flour, 1 ½ cups of regular oats, cinnamon, baking powder, baking soda, and salt.
- In a medium bowl, mix peanut butter, maple syrup, egg, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and fold until combined.
- Scoop the dough onto a baking sheet lined with parchment paper and gently flatten the cookies.
- Bake for 10 minutes and then remove from the oven to cool on a rack.
- Melt chocolate chips in a microwave-safe bowl in 30-second increments, stirring until smooth.
- Dunk the bottom half of each cookie in the melted chocolate and place on a parchment-lined baking sheet to cool.
