Ingredients

Dough Ingredients

  • 4 cups unbleached all-purpose flour
  • 2 teaspoons kosher salt
  • 2 teaspoons sugar
  • 2 teaspoons instant yeast
  • 2 cups lukewarm water

Coating Ingredients

  • room temperature butter for greasing the bowls
  • 4 tablespoons everything bagel seasoning or dukkah

Instructions

  1. Whisk together the flour, salt, sugar, and instant yeast in a large mixing bowl.
  2. Add lukewarm water to the dry ingredients and mix until a sticky dough forms.
  3. Cover the bowl and let the dough rise in a warm place for at least 1 hour.
  4. Preheat the oven to 425ºF and grease two 1-quart oven-safe bowls with butter.
  5. Sprinkle 2 tablespoons of seasoning into each bowl, coating the surfaces.
  6. Deflate the risen dough and divide it into two equal pieces.
  7. Transfer each piece of dough into the prepared bowls and let rise for another 20 to 30 minutes.
  8. Bake for 15 minutes, then reduce the heat to 375ºF and bake for an additional 15 to 17 minutes.
  9. Turn the loaves out onto cooling racks and let cool before slicing.
