Quick and Easy Vegan Alfredo

Ingredients

The pasta

  • 1 cup pasta of your choice

The sauce

  • cup raw cashews
  • 1 clove garlic
  • 3 tbsp nutritional yeast
  • ¾ cup almond milk
  • 2 tbsp almond milk
  • 1 tbsp lemon juice
  • 2 tbsp non-dairy butter
  • 2 tsp organic Tamari soy sauce
  • 2 tsp Dijon mustard
  • 1 tbsp Tahini
  • a pinch nutmeg
  • ¼-½ tsp Kosher salt
  • ½ tsp Paprika
  • to taste freshly ground black pepper
  • to taste herbs or veggies (optional)

Instructions

  1. Cook the pasta until al dente, about 7-8 minutes, then drain and rinse with cold water.
  2. While the pasta cooks, add all sauce ingredients (except pasta) into a blender and blend until smooth.
  3. Add the drained pasta back into the pot and pour the desired amount of sauce over it.
  4. Heat over medium heat, stirring frequently, and add in any desired vegetables.
  5. Cook until everything is heated through, then serve immediately.
