Italian Breakfast Bowl

Ingredients

The bread bowl

  • 1 large round loaf sourdough bread
  • 2 teaspoons olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

The filling

  • 6 large eggs
  • 8 ounces sweet Italian turkey sausage
  • 1 small red onion
  • 1 red bell pepper
  • ¼ cup chopped fresh basil
  • 4 ounces grated part-skim mozzarella cheese
  • ¼ cup grated Parmesan

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet.
  2. Cut the top off the sourdough bread and hollow it out, leaving a shell.
  3. Drizzle the inside of the bread with olive oil and sprinkle with salt and pepper, then bake until crispy.
  4. Whisk the eggs with the remaining salt and pepper.
  5. Cook the sausage in a skillet until browned, then set aside.
  6. Sauté the onion and bell pepper until softened, then add the basil and sausage.
  7. Pour in the eggs and 2/3 of the mozzarella, cooking until just starting to set.
  8. Fill the bread bowl with the egg mixture, top with Parmesan and remaining mozzarella, and broil until bubbly.
  9. Let rest for 2 minutes, then slice and serve warm.
