Italian Breakfast Bowl

Instructions
- Preheat the oven to 350°F and prepare a baking sheet.
- Cut the top off the sourdough bread and hollow it out, leaving a shell.
- Drizzle the inside of the bread with olive oil and sprinkle with salt and pepper, then bake until crispy.
- Whisk the eggs with the remaining salt and pepper.
- Cook the sausage in a skillet until browned, then set aside.
- Sauté the onion and bell pepper until softened, then add the basil and sausage.
- Pour in the eggs and 2/3 of the mozzarella, cooking until just starting to set.
- Fill the bread bowl with the egg mixture, top with Parmesan and remaining mozzarella, and broil until bubbly.
- Let rest for 2 minutes, then slice and serve warm.
