Avocado Tuna Cakes

Ingredients

The cakes

  • 1 medium ripe avocado
  • 10 ounces solid white albacore tuna in water
  • ¼ cup seasoned whole wheat bread crumbs
  • ¼ cup finely chopped red onion
  • 2 tablespoons finely chopped fresh cilantro
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon hot sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • 1 large egg

Optional for serving

  • as needed whole wheat hamburger buns
  • as needed sliced avocado
  • as needed cheese
  • as needed plain Greek yogurt or sour cream
  • as needed cilantro
  • as needed salsa

Instructions

  1. Preheat the oven to 400°F and coat a baking sheet with cooking spray.
  2. In a bowl, mash the avocado and mix in the tuna, bread crumbs, red onion, cilantro, lime juice, hot sauce, garlic powder, salt, and egg until combined.
  3. Form the mixture into 6 patties and place them on the baking sheet.
  4. Bake for 10 minutes, flip the patties, and bake for an additional 10 minutes until crispy and cooked through.
  5. Serve warm, optionally on buns or atop greens.
