Ingredients

The mash

  • 1 pound cauliflower florets
  • 1 small celeriac, peeled and cubed (8-10 oz)
  • 1 large garlic clove, peeled and sliced
  • cup heavy cream
  • ½ stick butter (4 oz)
  • to taste salt
  • to taste pepper

Optional garnish

  • 1 tablespoon snipped chives

Instructions

  1. Peel and cube the celeriac, then boil with sliced garlic until tender.
  2. Cut the cauliflower into florets and steam in the microwave until tender.
  3. Combine the cooked celeriac and garlic with the cauliflower in a food processor and pulse to break up.
  4. Add heavy cream and puree until smooth, then mix in butter, salt, and pepper.
  5. Garnish with chives or parsley before serving.
