Fluffy Low Carb Mashed Cauliflower with Celery Root

Instructions
- Prepare the celeriac by cutting off the top and bottom, then peel it and cut into ½ inch dice.
- Place the diced celeriac and sliced garlic in a pot, cover with water, and boil until tender.
- Cut the cauliflower into florets, place in a microwavable bowl with 2 tablespoons of water, cover, and microwave until tender.
- Drain both the celeriac and cauliflower, then place them in a food processor and pulse to break them up.
- Add heavy cream and puree until smooth, then mix in the butter and season with salt and pepper.
- Garnish with chives or chopped parsley before serving.
