Fluffy Low Carb Mashed Cauliflower with Celery Root

Ingredients

  • 1 pound cauliflower florets
  • 1 small celeriac, peeled and cubed (8-10 oz)
  • 1 large garlic clove, peeled and sliced
  • cup heavy cream
  • ½ stick butter (4 oz)
  • to taste salt
  • to taste pepper
  • 1 tablespoon snipped chives (optional)

Instructions

  1. Prepare the celeriac by cutting off the top and bottom, then peel it and cut into ½ inch dice.
  2. Place the diced celeriac and sliced garlic in a pot, cover with water, and boil until tender.
  3. Cut the cauliflower into florets, place in a microwavable bowl with 2 tablespoons of water, cover, and microwave until tender.
  4. Drain both the celeriac and cauliflower, then place them in a food processor and pulse to break them up.
  5. Add heavy cream and puree until smooth, then mix in the butter and season with salt and pepper.
  6. Garnish with chives or chopped parsley before serving.
