Ingredients

The batter

  • 1 cup butterscotch chips
  • ½ cup butter
  • 1 ½ cups all-purpose flour
  • 1 cup brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs

The mix-ins

  • 2 cups mini marshmallows
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease a 13 x 9 baking dish.
  2. Melt the butterscotch chips and butter in a saucepan over medium heat, stirring until smooth.
  3. Remove from heat and cool the mixture to room temperature.
  4. In a large bowl, combine the flour, brown sugar, baking powder, salt, vanilla, and eggs with the cooled mixture until well blended.
  5. Fold in the chocolate chips and marshmallows.
  6. Spread the batter into the prepared baking dish.
  7. Bake for 25-30 minutes until the center is soft but will firm up while cooling.
  8. Allow to cool for 2-3 hours before cutting into squares.
