Vegan Crepes

Ingredients

  • 1 ¼ cup soy milk or any non-dairy milk
  • 1 cup Bob’s Red Mill Unbleached White All Purpose Flour
  • ¼ teaspoon sea salt
  • 1 tablespoon granulated sugar
  • 2 tablespoons melted vegan butter or oil

Instructions

  1. Blend the milk, flour, sea salt, sugar, and vegan butter in a high-speed blender until fully mixed.
  2. Cover the batter and let it rest for 30 minutes at room temperature.
  3. Grease an 8” to 10” pan lightly and heat it over medium heat.
  4. Pour ⅓ cup of batter into the pan while tilting it to spread the batter evenly.
  5. Cook the crepe for 1 to 2 minutes until fully cooked and dry to the touch, then flip it and cook for another 30-40 seconds.
  6. Repeat the process until all the batter is used, making about 4-5 crepes.
  7. Fill each crepe with your preferred toppings, fold, and serve.
