Ingredients

  • 10 oz frozen strawberries
  • 10 oz fresh rhubarb
  • ½ cup water
  • cup lemon juice
  • cup grass-fed gelatin
  • ¼ cup honey
  • pinch sea salt
  • to taste drops stevia

Instructions

  1. Simmer the strawberries and rhubarb in a medium pot until tender, about 15 minutes.
  2. In a small pot, combine water, lemon juice, and honey, and bring to a simmer.
  3. Gradually whisk the gelatin into the simmering mixture until dissolved.
  4. Blend the strawberries and rhubarb with the gelatin mixture until smooth.
  5. Add a pinch of sea salt and stevia to taste.
  6. Line a large rectangular baking dish with parchment paper, pour in the mixture, and refrigerate until set.
  7. Cut into shapes using cookie cutters or slice into squares.
