Instructions
- Simmer the strawberries and rhubarb in a medium pot until tender, about 15 minutes.
- In a small pot, combine water, lemon juice, and honey, and bring to a simmer.
- Gradually whisk the gelatin into the simmering mixture until dissolved.
- Blend the strawberries and rhubarb with the gelatin mixture until smooth.
- Add a pinch of sea salt and stevia to taste.
- Line a large rectangular baking dish with parchment paper, pour in the mixture, and refrigerate until set.
- Cut into shapes using cookie cutters or slice into squares.
