Ingredients

The brownies

  • 1 cup walnut pieces
  • ½ cup hemp hearts
  • cups lightly packed pitted Medjool dates
  • ½ cup raw cacao powder or unsweetened cocoa powder
  • teaspoons pure vanilla extract
  • ¼ teaspoon fine sea salt
  • 1 to 3 teaspoons water
  • cup chopped walnuts
  • 2 tablespoons raw cacao nibs or chopped walnuts

The homemade chocolate

  • ½ cup virgin coconut oil
  • ½ cup raw cacao powder or unsweetened cocoa powder
  • ¼ cup pure maple syrup
  • pinch fine sea salt
  • ¼ teaspoon pure vanilla extract
  • to taste sliced fresh strawberries (for garnish, optional)

Instructions

  1. Line a loaf pan with parchment paper.
  2. Process walnuts in a food processor until finely crumbled.
  3. Add hemp seeds and pitted dates to the processor and blend until sticky.
  4. Mix in cacao powder, vanilla, and salt until combined, adding water if necessary.
  5. Fold in chopped walnuts and cacao nibs, then spread the mixture in the pan.
  6. Freeze the brownie base for about 10 minutes.
  7. Melt coconut oil in a pot, then whisk in cacao powder, syrup, salt, and vanilla until smooth.
  8. Pour the chocolate topping over the brownies and freeze until firm, about 20 minutes.
  9. Slice the brownies and garnish with strawberries if desired.
  10. Store leftovers in an airtight container in the fridge or freezer.
