Instructions
- Line a loaf pan with parchment paper.
- Process walnuts in a food processor until finely crumbled.
- Add hemp seeds and pitted dates to the processor and blend until sticky.
- Mix in cacao powder, vanilla, and salt until combined, adding water if necessary.
- Fold in chopped walnuts and cacao nibs, then spread the mixture in the pan.
- Freeze the brownie base for about 10 minutes.
- Melt coconut oil in a pot, then whisk in cacao powder, syrup, salt, and vanilla until smooth.
- Pour the chocolate topping over the brownies and freeze until firm, about 20 minutes.
- Slice the brownies and garnish with strawberries if desired.
- Store leftovers in an airtight container in the fridge or freezer.
