Ingredients

Brownie Layer

  • 1 cup raw walnuts
  • ½ cup raw almonds
  • ~1 cup dates (medjool or deglet noor, pitted)
  • ¼ cup semisweet or dark chocolate chips
  • ½ cup unsweetened cocoa or raw cacao powder
  • 1 pinch sea salt

Peanut Butter Layer

  • ½ cup pitted dates
  • ½ cup raw almonds
  • 1 cup roasted salted peanuts
  • ½ cup natural salted peanut butter

Instructions

  1. 1. Pulse dates in a food processor until small bits remain and set aside.
  2. 2. Add walnuts, almonds, chocolate chips, and cocoa powder to the processor and pulse until combined.
  3. 3. While processing, add small bits of dates until a dough forms, adding more dates if too dry.
  4. 4. Press the mixture into an 8x8 pan lined with parchment or plastic wrap and flatten it.
  5. 5. For the peanut butter layer, process dates until small bits remain and set aside.
  6. 6. Add raw almonds and peanuts to the processor and pulse until small bits remain.
  7. 7. Add peanut butter and dates back to the processor and process until combined.
  8. 8. Press the peanut butter mixture on top of the brownie layer until smooth.
  9. 9. Freeze for at least 15 minutes before cutting into squares.
