Ingredients

The base

  • 2 cups whole walnuts
  • 2 ½ cups dates, pitted
  • 1 cup raw cacao or cocoa powder
  • ¼ tsp sea salt

The mix-ins

  • 1 cup raw unsalted almonds, roughly chopped

Instructions

  1. Blend walnuts in a food processor until finely ground.
  2. Add cacao and salt, then pulse to combine.
  3. Add dates one at a time while the processor runs until the mixture resembles cake crumbs but sticks together when pressed.
  4. In a large bowl, mix the walnut-cacao blend with chopped almonds.
  5. Press the mixture into a lined cake pan or mold.
  6. Chill in the freezer or fridge until ready to serve.
