Shallot Vinaigrette

rosé wine

sugar (or equiv. honey)

extra virgin olive oil

crème fraîche or a splash of cream
Instructions
- Sprinkle minced shallots with salt on a cutting board and chop until a paste forms.
- Transfer the shallot paste to a bowl and mix in rosé wine and sugar. Let it sit for at least 10 minutes.
- Slowly whisk in the olive oil to create an emulsion.
- Add crème fraîche and continue whisking until well combined.
- Taste and adjust with more salt, sweetness, or rosé wine as needed.
