Shallot Vinaigrette

Ingredients

  • ¼ cup very finely minced shallots
  • ¼ teaspoon fine grain sea salt
  • 3 tablespoons rosé wine
  • a generous pinch sugar (or equiv. honey)
  • 5 tablespoons extra virgin olive oil
  • 1 tablespoon crème fraîche or a splash of cream

Instructions

  1. Sprinkle minced shallots with salt on a cutting board and chop until a paste forms.
  2. Transfer the shallot paste to a bowl and mix in rosé wine and sugar. Let it sit for at least 10 minutes.
  3. Slowly whisk in the olive oil to create an emulsion.
  4. Add crème fraîche and continue whisking until well combined.
  5. Taste and adjust with more salt, sweetness, or rosé wine as needed.
