Ingredients

  • 1 pound skinless salmon filet
  • 1 tablespoon fresh ginger, peeled and minced
  • ¼ cup fresh scallions, finely chopped
  • ¼ cup fresh cilantro, minced
  • 2 large eggs
  • 1 tablespoon freshly squeezed lime juice
  • ½ cup blanched almond flour
  • 1 teaspoon celtic sea salt
  • ¼ cup wasabi powder
  • 1 tablespoon water
  • as needed none coconut oil for frying

Instructions

  1. Rinse the salmon, pat it dry, and cut it into ¼-inch cubes.
  2. In a large bowl, combine the salmon, ginger, scallions, cilantro, eggs, lime juice, almond flour, and salt.
  3. In a small bowl, mix the wasabi powder and water to form a paste.
  4. Incorporate the wasabi paste into the salmon mixture.
  5. Form the mixture into 2-inch patties.
  6. Heat coconut oil in a 9-inch skillet over medium-high heat.
  7. Sauté the patties in batches until golden brown, about 6-8 minutes per side.
  8. Serve the burgers.
