Ingredients

The dough

  • ½ cup raw sugar
  • cup dark brown sugar
  • ¼ cup mashed avocado
  • 1 tablespoon unsweetened applesauce
  • 1 large egg white
  • 1 teaspoon pure vanilla extract
  • ½ cup white whole wheat unbleached flour
  • cup all-purpose flour
  • cup unsweetened cocoa powder
  • ¼ teaspoon baking soda
  • teaspoon kosher salt
  • cup semisweet chocolate chunks
  • ½ cup finely chopped walnuts

For baking

  • optional none cooking spray or oil mister

Instructions

  1. Preheat the oven to 350°F and prepare baking sheets.
  2. In a bowl, mix the sugars, avocado, applesauce, egg white, and vanilla until smooth.
  3. In another bowl, combine the flours, cocoa powder, baking soda, and salt, then fold into the wet mixture.
  4. Add chocolate chunks and walnuts, then refrigerate the dough for 15 minutes.
  5. Drop tablespoonfuls of dough onto the baking sheets and smooth the tops.
  6. Bake for 10 to 12 minutes, then cool on the pan for 5 minutes before transferring to wire racks.
