Ingredients

  • ½ cup old fashioned rolled oats
  • 1 cup white whole wheat flour
  • 6 tablespoons unsalted butter
  • ½ cup dark brown sugar
  • cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon espresso powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ¾ teaspoon baking soda
  • ¼ teaspoon cider vinegar
  • 1 large egg
  • 1 cup dark chocolate chips
  • ½ cup finely chopped walnuts

Instructions

  1. Grind the oats into a fine powder and mix with the flour.
  2. Beat the butter, sugars, vanilla, espresso powder, cinnamon, and salt until smooth.
  3. Add the baking soda, vinegar, and egg to the mixture.
  4. Stir in the dry ingredients, then add the chocolate chips and walnuts.
  5. Chill the dough in the refrigerator overnight.
  6. Preheat the oven to 350°F and line baking sheets with parchment paper.
  7. Drop tablespoonfuls of dough onto the sheets and bake for 9 minutes.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
