Instructions
- Grind the oats into a fine powder and mix with the flour.
- Beat the butter, sugars, vanilla, espresso powder, cinnamon, and salt until smooth.
- Add the baking soda, vinegar, and egg to the mixture.
- Stir in the dry ingredients, then add the chocolate chips and walnuts.
- Chill the dough in the refrigerator overnight.
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- Drop tablespoonfuls of dough onto the sheets and bake for 9 minutes.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
