Instructions
- 1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
- 2. In a small bowl, combine the gluten free flour, baking powder, and salt, then set aside.
- 3. Melt the dark chocolate in a microwave-safe bowl, stirring every 30 seconds until fully melted.
- 4. In a separate bowl, use a hand mixer to combine the eggs, coconut sugar, and vanilla until well mixed.
- 5. Once the chocolate has cooled, stir it into the egg and sugar mixture.
- 6. Add the dry ingredients to the wet mixture and stir until a thick batter forms, then fold in the walnut pieces.
- 7. Scoop about a tablespoon of batter, roll it into a ball, and place it on the baking sheet, flattening it slightly.
- 8. Repeat until all batter is used, spacing the cookies on the sheet.
- 9. Bake for 8-10 minutes until set, then transfer to a wire rack to cool.
