Ingredients

The dough

  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp table salt
  • 1 cup unsalted butter, softened
  • 1 cup packed light-brown sugar
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract

The chocolate and nuts

  • 4 oz bittersweet chocolate, chopped into chunks
  • 4 oz semi-sweet chocolate, chopped into chunks
  • 4 oz milk chocolate, chopped into chunks
  • 1 ¼ cups chopped Fishers Walnuts
  • to taste Maldon sea salt flakes (optional)

Instructions

  1. Whisk together flour, baking powder, baking soda, and salt in a bowl and set aside.
  2. In a stand mixer, cream together butter, brown sugar, and granulated sugar until creamy.
  3. Add eggs one at a time, mixing until combined, then add vanilla and mix.
  4. Gradually add the flour mixture on low speed until just combined.
  5. Stir in chocolate chunks and walnuts.
  6. Shape the dough into balls and chill in the refrigerator for 1 hour.
  7. Preheat the oven to 350°F during the last 15 minutes of chilling.
  8. Transfer dough balls to lined baking sheets and sprinkle with sea salt if desired.
  9. Bake for 11-12 minutes, ensuring the cookies look slightly under-baked in the center.
  10. Allow to cool on the baking sheet for several minutes before transferring to a wire rack.
