Turkey Taco Lettuce Wraps

Ingredients

The filling

  • 1 pound lean ground turkey
  • 2 teaspoons extra virgin olive oil
  • 1 small onion, chopped
  • 2 bell peppers, chopped
  • 2 cloves garlic, chopped
  • 2 tablespoons taco seasoning
  • ½ cup salsa
  • ½ cup water
  • 1 cup frozen corn
  • to taste salt and pepper

Optional toppings

  • as desired radishes
  • as desired avocado

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and a pinch of salt; cook until translucent.
  3. Add bell peppers and garlic; cook for a few more minutes.
  4. Push veggies to one side and add ground turkey; cook until browned.
  5. Stir in taco seasoning, salsa, water, and corn; mix well.
  6. Once heated through, turn off heat and assemble in lettuce cups.
  7. Top with optional radishes and avocado as desired.
