Ingredients

The filling

  • 1 Tbsp olive oil
  • ¾ cup chopped yellow onion
  • 1 lb 95% lean ground turkey
  • 2 cloves garlic
  • to taste salt
  • to taste freshly ground black pepper
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp paprika
  • ½ cup tomato sauce
  • ½ cup low-sodium chicken broth

For serving

  • as needed Iceberg or Romaine lettuce leaves
  • as needed Shredded Mexican cheese
  • as needed diced Roma tomatoes
  • as needed diced red onion
  • as needed diced avocado
  • as needed chopped cilantro
  • as needed light sour cream

Instructions

  1. Heat olive oil in a non-stick skillet over medium-high heat.
  2. Add onion and sauté for 2 minutes.
  3. Add ground turkey and garlic, season with salt and pepper, and cook until turkey is cooked through, about 5 minutes.
  4. Add chili powder, cumin, paprika, tomato sauce, and chicken broth.
  5. Reduce to a simmer and cook for about 5 minutes until the sauce has reduced.
  6. Serve the mixture over lettuce leaves with desired toppings.
