Ingredients

Filling

  • 1½ to 2 pounds lean ground turkey
  • ½ cup chopped onion
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup chicken broth
  • 1 cup chopped broccoli
  • 1 cup chopped cauliflower
  • 1 cup chopped zucchini
  • 1 cup chopped carrots
  • 8 to 12 ounces tomato sauce
  • 2 cups torn spinach

For Serving

  • Romaine lettuce leaves or other lettuce cups
  • Shredded cheese
  • Diced avocados
  • Fresh cilantro
  • Chopped tomatoes
  • Sour cream
  • Cilantro Lime Dressing

Instructions

  1. Cook the ground turkey and chopped onion in a skillet until the turkey is no longer pink.
  2. Drain excess grease and add chili powder, cumin, garlic powder, coriander, salt, and pepper; cook for a couple of minutes.
  3. Stir in chicken broth and add all chopped vegetables except spinach; cover and cook until vegetables are crisp-tender.
  4. Add tomato sauce and spinach; cook until spinach is wilted.
  5. Serve the filling in lettuce wraps with desired toppings.
