Instructions
- Cook the ground turkey and chopped onion in a skillet until the turkey is no longer pink.
- Drain excess grease and add chili powder, cumin, garlic powder, coriander, salt, and pepper; cook for a couple of minutes.
- Stir in chicken broth and add all chopped vegetables except spinach; cover and cook until vegetables are crisp-tender.
- Add tomato sauce and spinach; cook until spinach is wilted.
- Serve the filling in lettuce wraps with desired toppings.
