Turkey Taco Lettuce Wraps

Ingredients

The filling

  • 6 teaspoons canola oil
  • 1.25 pounds 99% fat-free ground turkey
  • 1 small sweet yellow onion, diced
  • cups frozen corn kernels
  • 1 cup canned seasoned black beans, drained
  • 1 cup fat-free mild salsa
  • ½ cup reduced-sodium chicken broth
  • 1 tablespoon reduced-sodium soy sauce
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • to taste freshly ground black pepper

The wraps

  • 12 whole leaf lettuce cups (Bibb or butter lettuce)

Accompaniments

  • to taste fresh cilantro leaves
  • to taste fat-free shredded cheddar cheese
  • to taste lime wedges

Instructions

  1. Heat oil in a skillet over medium-high heat and brown the turkey for about 5 minutes, then transfer to a plate.
  2. In the same skillet, sauté onions in remaining oil until tender, then add turkey back with corn, black beans, salsa, chicken broth, soy sauce, chili powder, cumin, and pepper. Cook until heated through.
  3. Spoon the mixture into lettuce wraps and add desired accompaniments. Serve immediately.
