Ingredients

The potatoes

  • 1 large russet potato
  • 1 ½ to 2 cups water

The frying oil

  • 28 ounces vegetable oil or canola oil

The batter

  • 1 ½ cups all-purpose flour
  • ¼ cup paprika
  • 1 ½ teaspoons cayenne pepper
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons onion powder
  • 1 tablespoon salt
  • 1 ½ teaspoons black pepper

Instructions

  1. Preheat the oven to 200 degrees and line a baking sheet with parchment paper or foil, placing a wire rack on top.
  2. Spiralize the trimmed potato using a 1/4-inch blade and cut long spirals into shorter pieces.
  3. Soak the spiralized potatoes in cold water for 15 to 30 minutes.
  4. In a Dutch oven, heat 1 ½ to 2 inches of oil to 375 degrees.
  5. In a bowl, whisk together flour, paprika, cayenne, garlic powder, onion powder, salt, and pepper, then add water to form a batter.
  6. Drain the fries, dry them, and dredge in the batter.
  7. Fry the coated fries in batches until golden brown, about 4 to 5 minutes.
  8. Transfer the cooked fries to a paper towel-lined baking sheet and sprinkle with salt, keeping them warm in the oven.
