General Tso's (Not) Chicken Bowls

The bowls

broccoli crown cut into florets

seitan, cubed

grapeseed oil or any neutral-flavored cooking oil

fresh grated ginger

Instructions
- Whisk all sauce ingredients together in a small bowl and set aside.
- Pour 1 inch of water into a large saucepan or wok, bring to a boil, add broccoli, cover, and steam until bright green and tender-crisp, about 2 minutes. Remove and set aside.
- Place cornstarch and seitan in a large plastic bag and toss to coat.
- Heat oil in a large skillet over medium-high heat, add seitan in a single layer, and cook for 3-5 minutes until crispy and golden. Flip and cook another 3-5 minutes.
- Remove seitan from skillet and set aside. Add garlic, ginger, and chili peppers to the skillet, sauté for about 1 minute.
- Add sauce, seitan, and broccoli to the skillet, flipping to coat. Cook for about a minute until sauce thickens.
- Divide among bowls, serve with rice, and top with sesame seeds and scallions.
