General Tso's (Not) Chicken Bowls

Ingredients

The sauce

  • ¼ cup vegetable broth
  • 2 tablespoons honey or agave
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch

The bowls

  • 1 large broccoli crown cut into florets
  • ¼ cup cornstarch
  • 2 8-ounce packages seitan, cubed
  • 2 tablespoons grapeseed oil or any neutral-flavored cooking oil
  • 3 cloves garlic, minced
  • ½ tablespoon fresh grated ginger
  • 15 pieces dried red chili peppers
  • 2 scallions, chopped
  • 2 teaspoons sesame seeds

Instructions

  1. Whisk all sauce ingredients together in a small bowl and set aside.
  2. Pour 1 inch of water into a large saucepan or wok, bring to a boil, add broccoli, cover, and steam until bright green and tender-crisp, about 2 minutes. Remove and set aside.
  3. Place cornstarch and seitan in a large plastic bag and toss to coat.
  4. Heat oil in a large skillet over medium-high heat, add seitan in a single layer, and cook for 3-5 minutes until crispy and golden. Flip and cook another 3-5 minutes.
  5. Remove seitan from skillet and set aside. Add garlic, ginger, and chili peppers to the skillet, sauté for about 1 minute.
  6. Add sauce, seitan, and broccoli to the skillet, flipping to coat. Cook for about a minute until sauce thickens.
  7. Divide among bowls, serve with rice, and top with sesame seeds and scallions.
