Ingredients

The Concentrate

  • 12 pieces allspice berries
  • 10 pieces black peppercorns
  • 8 pieces whole cloves
  • 6 pieces green cardamom pods
  • 4 pieces cinnamon sticks
  • 4 cups water
  • 3 tablespoons rooibos tea
  • 1 inch piece of ginger, sliced
  • 1 teaspoon vanilla extract
  • pinch sea salt
  • 3 tablespoons maple syrup, or to taste

For 1 Latte

  • 8 oz masala rooibos chai concentrate
  • 8 oz plant-based milk of your choice

Instructions

  1. Crack the allspice, peppercorns, cloves, and cardamom pods using a chef's knife.
  2. Toast the cracked spices and cinnamon sticks in a skillet over medium heat until fragrant.
  3. Boil the water in a medium saucepan, then add the toasted spices, rooibos tea, and ginger.
  4. Simmer the mixture for 18-20 minutes, then strain it into a bowl.
  5. Stir in the vanilla, sea salt, and maple syrup, and let it cool before storing it in the fridge.
  6. To make a latte, combine 8 oz of the concentrate with 8 oz of plant-based milk and heat it.
